We purchased this knife set as a wedding gift for a young relative after much online research on sites specializing in knives and their manufacturing and usage and applying our own experiences with a wide range of kitchen knives, including other Zwilling lines and higher end custom knives.
This set is at what we would call the low end of (forged, not stamped!) knives that we might recommend for beginners who are serious about home cooking and learning knife skills. The Rockwell hardness rating of 57 is a little softer than what we would recommend for already experienced knife users, but these are reasonably priced and at this hardness should be more forgiving – less likely to chip, can take a beating, and be easily sharpened. That makes them a good set for a beginner while still being of a good level of quality that should hold up for the long term. They could be all many home cooks would ever need.
While it would generally be better to have a collection of kitchen knives of varying metals/hardnesses and cutting edge angles for different types of cutting applications, that tends to be more expensive versus getting a set. More experienced home cooks looking to move up from their beginner knives but still wanting a matching set might take a look at the Zwilling Diplome or Kramer by Zwilling sets, for example.
The main thing is that our relative is very happy and said this is just the type of set he needs as one who cooks at home all the time and wants to build his knife skills with a good set that is forgiving.
We found this set on a huge sale on another site and Best Buy gave us a price match over the phone, making for a great deal!
