    After reading the peer-reviewed studies on the toxicity of using gas ranges in the home, we realized that 3 of us were experiencing breathing difficulty every time around dinner. The coincidence was too strong to ignore, so we decided to invest the money and get rid of our gas stove top. We researched the difference between electric and induction and decided on this induction stove top based on the reviews. We had to buy a new cookware set, which wasn’t really a big deal. If you are on the fence about switching, get off the fence and make the switch. We have been avid gas users for over 30 years. Induction is so easy and so much better than gas could ever be in regard to efficiency. There is a slight learning curve when it comes to cooking rice and other foods, as the simmer may take a few adjustments as the water starts to absorb into the rice. I can’t heat up my tortillas like I used to be able to, but I can live with that. I have a cast iron griddle that heats up in no time. You can get water to boil in no time at all. Way faster than the strongest burner on our old gas stove and the repair techs could never get corrected from burning yellow flames (you don’t want yellow flames, only blue). We have made the switch and will never look back.
