The temperature seems to be spot on and detects a temperature change within fractions of a second. I wish it would stay on longer as I like to keep an eye on the temp, instead of having to turn it on and off frequently.

This has been such a great tool! I tend to check my food every couple minutes. This obviously lets heat escape and could take longer. With this thermometer, I set a timer for so many minutes just to flip the meat. Then I wait for it to reach temp.
